Vermentino de Sardegna DOC ‘Opale’

Tasting Notes

‘Opale’ is pale golden yellow with citrus highlights. There are complex aromas of ripe fruit, stewed apples, and jasmine on the nose with hints of vanilla and English toffee. It is full-bodied and well-balanced on the palate with a silky texture that comes from a good balance of acidity and minerality. It has a long and clean finish. Pairs will with savory pasta dishes, grilled fatty fishes, light meats, and medium-aged cheeses.

Vinification

Harvest takes place in mid-to-late September. The whole berries are gently pressed, and the must ferments at controlled temperatures. The wine rests on the lees for a minimum of 2 months.

Aging

It matures in lined cement vats, and finally rests in bottle for 2 more months.
