Offida Pecorino DOCG ‘Veronica’

Tasting Notes

Veronica is made with 100% Pecorino grapes (a local white varietal), all organically farmed. Brassy gold with a fresh bouquet of varietal notes reminiscent of peach and white flowers. Approachable in a fairly bright zesty way, revolving nicely around acidity, which makes it interesting, and will work quite well with grilled or roasted fish, or creamy white meats. Given its acidity it also will age nicely for several years.

Despite being dedicated to Veronica, the owner’s third and last daughter, this wine, a selection of Pecorino grapes, is second in line among the winery’s white wines. First is the entry level Passerina ‘Lucrezia’, topped off by the Pecorino Riserva ‘Io sono Gaia, non sono Lucrezia’.

Vinification

The grapes are harvested by hand in 200kg bins and immediately transferred to refrigerated cells at 32 degrees F and then processed shortly after to avoid oxidation. Soft pressing and settling at low temperature is carried out in stainless steel. This tecnique ensures extraction of all the varietal aromas.

Aging

5 months in stainless steel resting on its lees. Bottled in February.
