Tasting Notes

‘Schietto’ is a line of single-varietal wines. The word means ‘sincere, straightforward’ and Francesco Spadafora aims at bringing through the best possible representation of each varietal.

Schietto Chardonnay is a reserve bottling made with 100% certified organic grapes, sourced from a long, exposed ridge which faces north, hence harvest takes place in three stages to ensure optimal ripening. This is also to integrate different levels of sugar and acidity. Fermentation takes place in cement vats, where fresh must from the different harvests is added to the must that is already fermenting in order to prolong the process.

An elegant, structured wine, only 30% of the wine undergoes malolactic fermentation and sees a short ageing in small 225-liter oak barrels for 3 months.

Golden yellow color. The bouquet includes varietal notes including ripe citrus and spices, all well integrated with the notes of vanilla imparted by the oak. A full-bodied white wine that will pair well with risotto with seafood, grilled shellfish, fish and sushi.

Simple Guyot, 4,800 plants per hectare. Planted in 1996. Yield is 40hl/hectare.

Vinification

Fermentation takes place in temperature-controlled cement vats with fresh must added in after each harvest batch in order to prolong the process. Only 30% of the mass is then transferred to 225-liter oak barriques (of 1st, 2nd and 3rd use) for malolactic.

Aging

30% aged in barrique for 3 months, the rest in stainless steel vats for 12 months, then 12 months in bottle.
